RM Wild Tasmanian Honey is classified in the industry as “raw” honey. The extracting and packing temperature is maintained below 45°C, ensuring that the flavour, aroma and health benefits of the honey remain uncompromised.

Here’s a breakdown of the process from honeycomb to jar

  • When extracting honey from the honeycomb during the summer months, it is a liquid.
  • Extracted honey goes straight into bulk containers for storage.
  • In a matter of weeks, the natural sugars in the honey begin to crystallise, and the entire contents of the container will eventually set hard.
  • When the honey is required for packing, it is gently re-liquefied in the “warm room”, all the while monitoring the temperature to ensure that the honey is not over heated.
  • Liquefying the honey is necessary to enable it to be pumped into a tank, where it is 'seeded' by adding a small amount of honey that has already developed a fine crystal structure.
  • Once seeded, it is then stirred for a number of days until our signature 'soft candy' consistency is achieved.
  • Candied honey is your guarantee that the product has not been diluted with syrup or overheated.
